Apple Stuffed Pie Pumpkin

Ingredients:
Pie Pumpkin (big enough to hold 3 big apples)
3 to 4 peeled & sliced apples
1/2 to 2/3 cup raisins
1/2 cup pecans or walnuts
1/4 cup sugar or equal substitute
1/4 tsp cinnamon
1/4 tsp nutmeg
1 cup Craisins (optional)
Directions:
Preheat oven to 350. Clean out pumpkin like doing a jack-0-o-lantern. Combine ingredients & fill pumpkin, placing top on. I wrap with aluminum foil, not necessary though. After 3/4 hour, gently stir/turn apples inside. Serve warm as side or great topped with any kind of ice cream.
Cook's Notes:
Definitely amend ingredients to taste. You can use cranberries instead of craisins, but a bit tart.
